Coconut Macaroons 

Ingredients

  • 3 cups shredded unsweetened coconut 

  • 2/3 cup maple syrup or honey 

  • 1/2 tsp salt 

  • 4 egg whites 

  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350°F and line baking sheet with parchment. 

  2. In a large bowl, mix together coconut, maple syrup and salt until combined. 

  3. Whisk egg whites in separate bowl until peaks form. 

  4. Gently fold in egg whites and vanilla, continue mixing until the mixture is fully combined. 

  5. Drop rounds of the batter onto the baking sheet. Bake for 13-16 minutes (depending on size) until tops of the macaroons are lightly browned. Don’t take them out early as the crispy brown coconut on the outside is super tasty. 

  6. If you want to dip them in chocolate, melt a cup of chocolate chips in a double boiler and then carefully dip either the tops or one side.
