Healthy Goji Bliss Balls 

Ingredients

  • 1 cup cashews or almonds or mix of the two 

  • 1/4 cup coconut butter 

  • 6-8 dates depending on size and sweetness wanted 

  • 1/2 cup goji berries 

  • 1/2 cup shredded, unsweetened coconut, plus 1/4 cup for rolling balls in 

  • 2 Tbsp ground hemp seed (optional) 

  • 3 Tbsp cocoa powder 

Directions

  1. Take out 2 Tbsp of goji berries and put aside. 

  2. Soak rest of goji berries and dates in warm water for at least a half hour. 

  3. Place nuts and coconut butter in food processor and pulse until chopped fine. 

  4. Add coconut, goji berries, dates, cocoa powder and hemp seeds. Blend until well mixed. At the very end add the rest of the goji berries and pulse a couple of times to mix in. 

  5. Roll into balls and roll in shredded coconut. Put in the fridge to make more solid.
