Rich Yummy Double Chocolate Cookies

This is a grain free recipe! Makes 25 cookies. 

Ingredients

  • 1 cup almond butter, raw works better (at room temperature) 

  • 3/4 cup coconut sugar or Rapadura sugar 

  • 1 egg 

  • 1 egg yolk 

  • 1 1/2 tsp vanilla extract 

  • 1 tsp baking soda 

  • 1/2 tsp salt 

  • 1/2 cup cocoa powder 

  • 4 oz of chopped dark chocolate or chocolate chips 

Directions

  1.  Preheat oven to 350°F. 

  2. Whisk egg and egg yolk in small bowl. Mix sugar, cocoa powder, salt and baking soda together. 

  3. Now mix all the ingredients together except chocolate chips. Once well mixed, add chocolate pieces. 

  4. Drop spoonfuls onto cookie sheet, greased or on parchment paper. Keep some distance as they spread. Bake for 10-12 minutes. Slightly undercooked is better than over-cooked.
